Traditionally used mostly in Spanish and Hungarian cuisines, the fruits of mild chili or bell peppers are dried and ground to produce Paprika.  Such peppers are very high in vitamin C, most of which is retained in the powered form.  Often seen sprinkled on deviled eggs or potato salad, paprika adds something special to rice dishes, stews, and soups, also lending the distinctive red coloring to goulash and tandoori chicken.  Try adding paprika to your homemade salad dressing.  Temporarily emulsifying the oil and vinegar, this spices makes a smooth and beautifully colored salad dressing!
